Jaggery Pudding

IMG-20150126-WA0004-1This is a very easy dessert and can make with minimum ingredients. A very good dessert for a lunch party.only thing is you have to make sure the jaggery is good quality.


  • Fresh Coconut Milk            3 cups
  • Jaggery                                   150 g
  • Gelatin                                   2 tbsp
  • vanilla essence                   1/2 tsp
  • Cold Water                            2 tbsp
  • Hot Water                             2 tbsp

Grate the jaggery and  mix with coconut milk and bring to a boil.  stir continuously until jaggery is dissolved.

Meanwhile in a cup sprinkle the jaggery over 2 tbsp of cold water and let it bloom for 2 minutes , then add 2 tbsp of hot water and mix well.

After jaggery fully dissolved add the gelatin mixture and give a good mix and switched off the stove.

Now add vanilla, mix well and  and let it cool for sometime.Then pour in to a greased tray or mould and refrigerate until set. you can garnish with some cashews when serving.

  1. Hello. Thank you for recipe. I wanna try it. But seems am bit confused.. how two layers formed?
    Till coconut milk ,jaggery and boiling I understood. Mix gelatin thing in boiled coconut milk mixture or separate?
    Please tell me.
