Rice Porridge ( Nombu Kanji)

Ramadan Kareem!
Once again we are in Ramadan. It  is the 9th month of  Islamic calendar and the month which Holy Quran revealed makes it more special. During this month we fast dawn to dusk and in between we don’t eat or drink anything and sexual relations is also forbidden during fasting hours.

Today I am going to share a  special Ifthar ( time of breaking the fast) recipe in  Sri Lanka and we call it “nombu kanji”.

In our home my mom always make this during Ramadan at home and taste  amazing. This time I miss mom’s porridge.

Back to the recipe, for this porridge we use raw rice if you don’t have you can make it with basmathi rice too. Now most of the times me too making it with basmathi rice as it is hard to find raw rice here in supermarkets. Mostly we add beef  or chicken to this porridge but today I am going to share the veg version. cooking in a pressure cooker is easy but you can cook without using it too.

I did not able to Take step by step photos today and I post this in a hurry as some of the readers ask me this recipe.

Ingredients

  • Raw Rice                                1/2 cup
  • Garlic Cloves                         4-5
  • Fenugreek seed                    1/2 tsp
  • Chopped Carrot small        1
  • Chopped Beans                     4
  • Water                                       3 cups
  • Thick Coconut Milk             1/2 cup
  • Curry Leaves and Pandan leaves few
  • Salt to taste

To Temper

  • Ghee/Oil                          2 tsp
  • Ginger Garlic Paste      1 tsp
  • Cardamom                      1
  • Cinnamon                      small piece
  • Onion Sliced                 few

 

Wash the rice and fenugreek seed together and let the water to drain.

In a pressure cooker add all the ingredients except coconut milk and the things listed under temper.

Cover and pressure cook for 4 whistles or until mushy. once the pressure releases open it and mash well.

Now add the coconut milk and heat it again and switched off the heat. If the porridge is too thick you can add little more milk and adjust the consistency. I like it little thick, you can adjust it by your liking by adding little water before adding the coconut milk too.

In a separate pan add oil and heat. add in onion and saute for 20 secs and add all the ingredients listed under temper and saute well until onion turns golden brown and add this mixture to the porridge and cover. when serving give a quick mix.

Note

If you are adding beef or chicken (100g) to this kanji then first cook it separately until slightly tender then can add the other ingredients along and cook except water as you can use the stock instead  of water.

Or else u can cut the beef or chicken into small pieces and cook along with the rice.
